Luciano Monosilio is one of Rome's most celebrated chefs — a Michelin-starred cook who earned the title of Emerging Chef by Gambero Rosso and Best Chef Under 30 by Identità Golose, and whose carbonara famously caught the attention of the New York Times.
Known as the 'King of Carbonara', Monosilio has become the defining voice of contemporary Roman cooking — creating a bold new culinary dialect while staying fiercely faithful to the capital's proudest traditions. He trained in the kitchens of Uliassi and Enrico Crippa before opening Luciano – Cucina Italiana near Campo de' Fiori, complete with its own in-house pasta lab.
His cooking is instinctive and ingredient-driven: rooted in the ancient flavours and techniques of Rome, elevated with an innovative contemporary twist.
